This gluten free bread does not fall in the middle when baked, nor is it as hard as a rock. It has a nice soft interior and is good at room temperature. You won't have to toast it to eat it! You can toast it though and make wonderful gluten free garlic bread. Make Gluten Free bread crumbs or croutons for salads....if you have any left over that is!

No one believes this is a rice based bread, not gritty, no bean flours and no wheat derivatives. And no methyl cellulose made from wood or cotton.

Everything in it is a natural ingredient, easily obtainable in bulk from your favourite gluten free flour supplier. It can also be made without milk or casein, or eggs, or corn, although these are included in the book. You can easily substitute or omit with good results. Just look at the page for substitutions in the beginning of the book.

This bread is so good, I included a variation of the recipe in all of my books! The one in Gluten Free Goodies is a Holiday style, the one in Health & Nutrition is an Enriched version. Recently I attended a chapter meeting of the Canadian Celiac Association. I brought some sample bread, and everyone was amazed, I got a really 'big head' as everyone said it was the best gluten free bread they had ever tasted!

The best news is that if you follow my directions and make this gluten free bread mix ahead of time. You can keep it on hand and have fresh gluten free bread any time.

Just add the liquids, let rise, knead and bake. Takes two hours to rise at room temperature, or mix it the night before, stick it in the fridge and bake it in the morning. Now that is easy!

People ask me if I use a bread maker. I know many people swear by them, but my breads need so little mixing, I find it easier and faster to make by them by hand. Another reason is that I essentially get bored eating the same thing. I like variety, and I think appearance is important. Because I can knead my gluten free bread into any shape just like traditional wheat dough, I can have a variety of shapes and many different recipes from the same basic dough.

If you have ever had Plum Cake, fresh fall damson plums on a yeast dough crust, topped with a dollop of whipped dream, you will want to have some of this in a gluten free form. With my basic yeast mix, you can! I remember visiting France and having this wonderful delicacy in Nancy. If you like a Focaccia Bread, you can easily make some using my real Italian Pizza Dough recipe contained in my small book of 20 recipes called A Sampler.

I have always tried to add nutrition to our foods, and even though we have been on a gluten free diet, it has been a healthy one, due to the variety of foods we eat and the home made goodness. Here is a quote from a new research regarding including Vitamin D in the breads. We deserve enriched gluten free breads!

"Elderly patients who ate vitamin D-fortified bread for a period of one year exhibit better bone mineral density maintenance than that produced by taking bone-building drugs such as bisphosphonates. Researchers in Romania, who provided bread fortified with 5000 International Units of Vitamin D and 800 milligrams of calcium on a daily basis to elderly nursing home patients, report a 28 percent increase in lumbar bone mineral density which far surpasses the 8 percent increase in bone mass density typically achieved with bone-building drugs. Dr. Veronica Mocanu, MD, PhD, and colleagues at the University of Medicine and Pharmacy at the Universitatii in Isai, Romania, presented the study at the Experimental Biology meeting in San Diego this week. Romania was chosen for the study because it is at a northern latitude similar to many cities throughout the world (Seattle, Boston, London) where solar ultraviolet radiation intensity is low, especially in winter months. Vitamin D is naturally produced via skin exposure to UV rays in sunlight. Vitamin D is necessary for proper calcium absorption and utilization for bone."
